Peanut Butter Swirl Chocolate Brownies (Vegan)


Happy mid-week everyone - Just two days left to TGIF, press on!

Today's breakfast: Kale nice cream with raw buckwheats, hehe.

So, what do you do when you're at home, other than sleeping and eating? BAKE, of course. So I made some low sugar, salt-free, vegan peanut butter swirl chocolate brownies.

This recipe is so easy because the ingredients are so basic and simple! It would only take you less than an hour to make this. 


  • 3/4 cup + 1 tablespoon all-purpose flour 
  • 6-8 TBSP (or 1/4 cup) cocoa powder 
  • 3/4 TSP baking powder
  • 1/2 cup organic raw sugar
  • 1/2 cup non-dairy milk (I used unsweetened soy milk)
  • 1/2 TSP vanilla essence
  • 1 TSP maple syrup (optional)
  • 2 dollops (huge tablespoons) organic smooth peanut butter
  • Optional: 1/2 cup vegan chocolate chips OR walnuts

1. Preheat oven to 180 degrees C (355 F)
2. Add the cocoa powder, flour, sugar and baking powder together.
3. Add the milk and mix well.
4. Add the vanilla essence. 
5. (Optional) Add chocolate chips if desired -- If you want a chocolatey brownie.
6. Stir well.
7. Pour the batter into a greased cake pan (use a square one).
8. Scoop two huge dollops of peanut butter, placing them randomly on top of the batter. (Time to show your artsy skills!) - I put mine in each corner, so there's about 1/2 a dollop at each corner. Of course, if you want a richer peanut butter taste, feel free to add more of it!
9. Using a toothpick, swirl the peanut butter and mix it with the batter. Once everything is mixed, (optional) you can use another tablespoon of peanut butter to decorate on top - do so by swirling just on the surface and not mixing everything.
10. Place it in the oven and bake for 30 minutes. (Check it at 25 minutes using a toothpick or a clean fork.)

The brownies came out not too moist, not sweet and has a subtle taste of peanut butter to it. Guilt-free indulgence, yeah?
